Bibingka Mix is a Filipino rice cake. The Filipino people love sweets and the Bibingka is no exception. It is a rice cake with a topping of cheese and salted eggs. It is served with butter, sugar and grated coconut. Bibingka is traditionally cooked in clay pots covered with banana leaves.
Taste and texture
Bibingka has a soft airy structure that is somewhat reminiscent of puto or an airy cake. Puto is a steamed cake, which has also earned a place in traditional Filipino cuisine.
Preparation method:
- Preheat oven at 220 degrees celsius and prepare molders line with banana leaf
- For every 500 grams of bibingka mix, prepare 1 cup (240 ml) evaporated milk, 1 cup water, 1/2 cup (100 gr) refined sugar, 1/2 cup (113 gr) melted butter and 4 pcs medium-sized eggs
- In a bowl, mix all ingredients until well blended, then strain mixture to remove residue
- Pour batter mixture 3/4 full for every molder and bake for 10-15 minutes
- Top with sliced cheese and salted egg after 10 minutes
- When cooked, brush surface with butter then top with grated coconut and sprinkle muscovado sugar
- Serve while hot
