Annatto seeds also are known in the Philippines as Annato or Atsuete are used as natural food coloring. The dark reddish-brown seeds are soaked in warm water of fried in oil. The seeds are pressed to extract their coloring to make Annatto oil or water. You can use it to color foods and give them orange to red tinge.
