Preservation in the acid of various types of fruit has been done for a very long time and dates back to the time when it was not yet possible to refrigerate products. Preservation in vinegar makes products last longer. Most microorganisms do not like an acidic environment. Sour herring is an example of this. Inlay in alcohol has a similar effect. This jar contains long thick pieces of Thai mango that have been preserved in a distilled vinegar.

Ingredients:

Mango 60%, Water 28.8%, Salt 8%, Sugar 5%, Distilled vinegar 2%, Citric acid 2%, Turmeric colorants (E100(ii) 0.01%), Benzoic acid (E210) 0.01% as preservative.
