Ginataang Bilo-Bilo

"Ginataang Bilo-Bilo" is a traditional Filipino dessert prepared using glutinous rice balls and coconut milk. This delightful and satisfying dish is popular in Filipino cuisine and is often enjoyed as a snack or dessert after a meal.

The dish gets its name from its key components: "ginataan" refers to the use of coconut milk as the base, and "bilo-bilo" refers to the small balls of glutinous rice used in the dish. These rice balls are also called "bilo-bilo" and can be compared to mochi, a sticky rice cake.

To make Ginataang Bilo-Bilo, the bilo-bilo (rice balls) are created by mixing glutinous rice flour with water to form a dough, which is then rolled into small balls. These rice balls are cooked in coconut milk along with other ingredients such as tapioca pearls, jackfruit, sweet potato, plantains, and even young corn. The mixture is often sweetened with sugar to accentuate the dessert's sweet flavor.

The result is a creamy and sweet dish with a delightful texture due to the sticky rice balls and the velvety coconut milk. The addition of various ingredients creates an interesting blend of flavors and textures, making Ginataang Bilo-Bilo a favorite among many Filipinos and enthusiasts of Filipino cuisine. How to prepare:

You will need:

  • 1 box Sarap Pinoy Ginataang Bilo-Bilo 200g
  • 1/2 cup water for Bilo-Bilo Mix
  • 1/2 cup water for Coconut Cream Powder
  • 4 cups water for cooking
  • 1 cup refined sugar
  • 1 cup chopped ripe banana
  • 1 cup chopped purple yam of camote
  • 1 cup jackfruit strips
  • 1 cup tapioca pearls

 

Directions:

  1. Set aside 2 tablespoon  Bilo-Bilo Mix.
  2. Form dough by mixing the remaining Bilo-Bilo Mix with 1/2 cup water.
  3. Mold the dough by hands into 1/2 inch ball size.
  4. In a bowl, dissolve the Coconut Cream Powder and the two tablespoon Bilo-Bilo Mix with 1/2 cup water.
  5. Bring to boil 4 cups of water and approximately 1 cup of refined sugar or you may add more sugar to suit your taste.
  6. Add chopped purple yam or camote and tapioca pearls. Simmer to cook.
  7. Drop into boiling water the dough balls and chopped banana and jackfruit strips. Continue to simmer until the balls float.
  8. Stir in the dissolved coconut mixture. Simmer for another minute or until the soup thickens.
    Serve hot.
