Salted Anchovy is a common ingredient in Filipino cuisine with in particular the North Ilocano cuisine. Monamon salted anchovies that are mistaken. Since it is a raw product is to be used it as an ingredient in food to be cooked. The smell of bagoong can for us Westerners have a strong odor which is not as nice experience, but the Filipino culture is totally in love with. Anchovy is an essential ingredient in many curries and sauces.
