Candle Nuts

This is the flesh of the nut of the Aleurites moluccana tree. If you see the nut for the first time, it reminds you of a hazelnut. Since the shell of the nuts is almost impossible to break, they are almost always sold peeled. These nuts cannot be eaten raw as they are slightly poisonous. Usually, the nuts are crushed in a mortar or coarsely cut and added to Indian stews. The ground kemiri nuts can be used to make the sauce more savory and thicker.
