Lee Kum Kee Char Siu Sauce is a sweet and savoury Chinese barbecue sauce for marinating pork. Char siu is a speciality associated with Hong Kong, where strips of pork are marinated and roasted for a flavourful finish.

Use this char siu marinade to prepare roasted pork, then add the cooked meat to fried rice, noodles or steamed bao buns. The sauce contains honey, fermented soybean paste, soy sauce, garlic and spices.

Preparation and storage

You will need: pork neck or shoulder and Char Siu Sauce.

1. Cut the pork into strips approximately 2 cm thick.
2. Coat the pork in the marinade and leave to marinate overnight.
3. Preheat the oven to 175 °C.
4. Place a baking tray with a little water at the bottom of the oven.
5. Line an ovenproof dish with aluminium foil.
6. Place a rack over the dish and arrange the pork on the rack.
7. Roast for 15 minutes on one side and 15 minutes on the other.
8. Brush with the remaining marinade during roasting.
9. Continue cooking until the pork is thoroughly cooked.

For basting, preferably reserve some marinade before it touches raw meat; thoroughly heat any marinade that has been in contact with raw meat before reuse.

Sugar, water, salt, honey, fermented soybean paste (water, salt, soybeans, wheat flour), soy sauce (water, salt, soybeans, wheat flour), modified corn starch, dehydrated garlic, spices, acetic acid E260.
