Pork Longganisa Spicy
The term longganisa comes from the Spanish name Longaniza. Unlike the Spanish Longaniza, the Filipino variety is not dry and not ready for direct consumption, but needs to be cooked first. These sausages are somewhat reminiscent of small bratwursts. Unlike bratwursts, longganisa is often slightly sweet. The sweetness and recipe vary greatly depending on the region where they are prepared.
The sausages are considered a delicacy and are enjoyed for both breakfast and dinner. One of the dishes in which they are commonly used is longsilog — a (fried) rice dish served with a fried egg and longganisa sausages.
Preparation method:
Thaw before use
Blanch in a small amount of water for approximately 30 minutes
Once the water has evaporated and oil is released from the sausages, fry until golden brown and fully cooked (approx. 75°C)
After blanching, the sausages can also be grilled or baked in the oven
