The term longganisa comes from the Spanish name Longaniza. In contrast to the Spanish Longaniza, the Filipino variant is not dry and not ready for direct consumption, but must first be cooked. These sausages are somewhat reminiscent of small bratwursts. Unlike bratwursts, longganisa is often slightly sweet. The sweetness and recipe vary greatly depending on the region where they are prepared. The sausages are considered a delicacy and are enjoyed both as breakfast and as an evening meal. One of the dishes in which they are commonly used is longsilog — a (fried) rice dish served with a fried egg and longganisa sausages.

Cooking Instructions:
Defrost before use
Blanch for approximately 30 minutes in a small amount of water
When the water has evaporated and oil is released from the sausages, fry them until fully cooked (approx. 75°C)
