Kare Kare Mix

Nothing is more heartwarming than a bowl of thick and savory Kare-Kare as tender oxtail and tropical vegetables are magically brought together by anchuete, toasted rice, and finely ground peanuts

How to prepare:

Ingredients:

• 1/2 kg oxtail, cut into pieces
• 720 ml of water
• 1 tbsp oil
• 1 pack (50 gr) Del Monte Quick N Easy Kare-Kare Mix
• 100 gr Eggplant, sliced
• 100 gr sitaw
• 100 gr banana heart
• 1 stalk pechay

How to prepare:

1. Boil water, add the oxtail, then boil for 5 minutes.
2. Drain and discard the broth.
3. To the meat add 3 cups water. Cover and simmer until meat is tender (add more water if needed). reserve 2 cups broth.
4. Saute meat in oil for 5 minutes. Add 1 1/2 to 2 cups broth and Del Monte Kare-Kare Mix. Stir.
5. Cover and simmer over low heat for 5 minutes or until sauce thickens, stirring occasionally.
6. Add eggplant, sitaw and banana heart, if desired.
7. Cover and simmer for 10 more minutes or until vegetables are partially cooked, stirring occasionally.
8. Add pechay.
9. Simmer for 3 minutes or until vegetables are done.
10. Serve with sautéed bagoong alamang and rice
