Unlike the green mung beans that we sell on our site, these beans are already prepared and ready to use. The red mung beans are often used in addition to a dessert. In the Philippines, for example, there is Halo-Halo, a mix of fruit with coconut jelly and shaved ice, ube, leche flan. The Red mung beans can be used as an addition to this. Deliciously sweet!
The mung beans are extracted from the pods of the Vigna Radiata plant. The pods contain six to fifteen olive-green seeds with a white oval navel. The mung beans are often processed as a vegetable or as a soup. In India, the dried seeds are ground into flour, from which flat bread is baked. Mung beans are the raw material for the very well known bean sprouts. Bean sprouts are produced by soaking the seeds in water and sprouting in the dark. If you are going to use the mung beans, you should first soak them for 6 to 12 hours. In Korea, the soaked peeled mung beans are used to make delicious airy pancakes.
