Daon Djeruk Purut, also spelled Daon Djeroek Poeroet or Daun Jeruk Purut, refers to aromatic dried lime leaves widely used in Indonesian and other Southeast Asian cuisines. They come from the citrus fruit commonly known today as makrut lime.

These leaves have an intense, fresh, lime-like citrus aroma. Even when dried, they add a distinctive fragrance to curries, soups, sauces, stews and coconut milk dishes. They pair especially well with chicken, fish, meat and vegetables, alongside lemongrass, galangal and chilli.

Preparation and storage

Lightly bruise or break the dried leaves before use, if desired, to help release their aroma. Simmer them in the dish and generally remove before serving. Specific storage instructions have not been provided.
