Daon Djeruk Purut, also spelled Daon Djeroek Poeroet and known in Indonesian as Daun Jeruk Purut, are dried aromatic lime leaves widely used in Indonesian and other Southeast Asian cuisines. They come from the citrus fruit now commonly referred to as makrut lime.
The leaves have an intense, fresh citrus aroma reminiscent of lime. Even when dried, they add a distinctive fresh and aromatic character to dishes. Before cooking, the leaves can be lightly crushed or torn to help release their fragrance.
Daun Jeruk is commonly simmered in curries, soups, sauces, stews, and coconut milk dishes. The leaves pair particularly well with chicken, fish, meat, and vegetables and are often combined with ingredients such as lemongrass, galangal, chilli, and coconut milk.
The dried leaves are generally used to infuse dishes with flavor and are usually removed before serving, similar to bay leaves.
