Rawon Bumbu

This Rawon bumbu is a spice paste that can serve as the basis for the traditional black Indonesian beef soup. The original recipe comes from Surabaya. The traditional preparation is made on the basis of keluak (black nuts). This ingredient gives the soup a strong nutty flavor and dark color. The soup is usually served with green spring onion, shallots, rice and salted egg. Of course the prawn crackers and the sambal should not be missing.

Necessities:

  • 1 lb beef
  • 5 stalks onion leaves cut into strips(optional)
  • 1 stalk lemongrass, bruised
  • 4 lime leaves

How to cook:

  1. Boil beef until half done, then cut into cubes. Allow 750 ml of broth to remain in the pan.
  2. Add bamboe spice mix, lemongrass and lime leaves, turn to low heat until the meat is tender
  3. Serve hot with chili sauce
